All these pies can be made with the salty pie crust found in Favorite bakes / Gluten-free deserts

Nutty pastry case

From The Wheat belly cookbook

Ingredients

  • 160gr (note: 1 cup = 100gr) ground nuts / 210gr
  • 85gr ground flaxseeds / 110gr
  • 6tbsp (90gr; note: 1tbsp = 15gr) melted butter / 8tbsp (120gr)

In large bowl, mix together all ingredients. Press into round tin. Bake at 180 degrees cover the base with foil. Bake for 15 minutes, remove foil, then turn over and bake another 10 minutes. 

Quiche Lorraine

Ingredients

  • 1 pastry crust
  • 3 eggs (or 2 whole + 2 yellow)
  • 1 pot of thick cream (or 1 cup milk or 1 cup cream or Ricotta)
  • 1 tbsp flour (or 1tbsp cornflour) diluted in 10ml milk
  • Ham chopped
  • Grated cheese

Fold out pastry crust in pie pan. Mix all ingredients, then pour into pan. Cook at 200° for 25-30 minutes. 

Vegetarian quiche

Ingredients

  • 1 pastry crust
  • 3 eggs
  • 2 pots of thick cream or Mascarpone 
  • 1 can of tuna
  • 1 oignon chopped
  • Loads of green herbs (chives, parsley, etc)
  • Mexican spice, salt, lemon pepper
  • Roasted vegetables (beetroot, sweet potato, etc)
  • 400gr cooked spinach

Fold out pastry crust in pie pan in large oven dish. Pre-cook 10mn. Mix all ingredients except vegetables. Place these on top of crust, then pour mixture over it. Cook at 200° for 20 minutes. 

Västerbottenpaj

A classic Swedish dish

Ingredients

For the base:

  • 125 gr butter
  • 3 dl flour
  • 2 tbsp water

Mix butter + flour to make a crumble texture. Add water to make a smooth dough. Press it into a round pan. Let cool in fridge for 30 min. 

Make holes with a fork, bake in 200° for 10 min.

For the filling:

  • 4 dl (50gr) grated Västerbottensost / 270gr
  • 3 eggs / 4 
  • 2 dl milk / 300ml
  • 1 dl cream / 100ml
  • Chillipowder
  • Salt
Mix eggs, milk, cream, salt and chilipowder. Add the cheese and pour mixture onto paj-base.

Bake 25-30 min in 200°.

Tomato pie from Provence

Ingredients

  • 1 pastry crust
  • Strong Dijon mustard
  • Grated strong cheese (Pecorino or Parmesan)
  • Fresh tomatoes peeled and sliced
  • Herbs
  • Olive oil

Fold out pastry. Cover one lawyer of mustard, then cheese, then tomatoes. Last a lawyer cheese. Sprinkle with oil and herbs. Cook at 220° for 30-40 minutes.
