Chocolate frostings

Dark chocolate frosting
- 200gr chocolate
- 160-200ml cream
- 2 tbsp expresso coffe
Heat all ingredients then pour over cake.
Alternative 1
- 200gr chocolate
- 200ml cream
- 2tbsp expresso coffee
- 200ml coconut shredded
Heat cream + coffee. Add chocolate. Pour over cake and sprinkle with coconut.
Alternative 2
- 100gr chocolate
- 50ml cream fraiche
- 25gr butter
- 25gr almond flakes
- 1 tbsp icing sugar
Heat all ingredients then pour over cake. Sprinkle with almonds.
Annika's tryffel
- 400gr chocolate (Lindt)
- 300ml cream
Heat all ingredients then pour over cake.
Annika's sweet & sour frosting
- 60gr soft butter
- 5dl icing sugar
- 1tbsp expresso coffee
- 100gr Philadelphia cheese
- 0,5dl cocoa
- 1tsp vanilla sugar
Cream cheese frostings

The best cream cheese frosting
Mix 300gr cream cheese (Philadelphia cheese) + 2/3 tbsp lemon juice + 100gr icing sugar or 60ml agave syrup
Another cheese frosting
Mix 80gr cream cheese + 30gr butter + 1 tsp vanilla essence or lemon rind + 1/2 cup (60gr) icing sugar
Tante Mae's frosting
Mix 1/2 cup (60gr) soft butter + 240gr cream cheese + 1 cup icing sugar + 1 tsp vanilla + 1 tsp cinnamon.
Note: Philadelphia cheese can be replaced by fromage blanc and creme fraiche (in France).
Alternative
Mix 150g melted butter + 2 cups (240g) icing sugar + juice from 1 lemon; Beat with an electric beater until smooth, then drizzle over the cake.
Vegan icing
Soak 2 handfuls of cashew nuts. Mix with juice from one lime (lemon works great), zest of the lemon, 3 tbsp agave syrup and 2 tbsp water.
