The basics!

Smoothies

If you are set up with the minimum for cooking, use your Kenwood mixer to make smoothies with your left overs. Mix bananas with chocolate powder, yogurt and little milk. Alternately mix banana with fruit juice and any red fruit (raspberry or blueberries are excellent vitamin sources).
Use the mixer to chop your chocolate bars (minimum 70% cocoa). Same goes for linseeds and other grains or nuts.  Keep in fridge in a Tupperware.

Classic 'Quatre-quarts'

The basic cake

Ingredients

  • 4 eggs
  • 220gr sugar
  • 200gr flour
  • 1 tsp baking powder
  • 220gr salted butter softened

Mix eggs + sugar. Add baking powder + flour. Last add butter. Bake at 180° for 45 minutes. 

Yogurt cake

In this recipe you should use the yogurt pot for measurements. 

Ingredients

  • 1 yogurt of 125gr (best: goat, sheep or soja)
  • 2 pots of flour
  • 2 tsp baking powder
  • 1 pot of sugar
  • 1/2 pot oil 
  • 2-3 eggs

Note: 1 pot of yogurt = 1,5dl

Mix all at once. Add ingredients of choice (chocolate chips, lemon peel, sultanas, fresh fruit). Bake at 180° for 35-40 minutes. 

Annika's banana pancakes

Ingredients

  • 3 bananas mashed
  • 4 eggs
  • Salt & cinnamon

Mix all and fry in coconut oil. 

Chocolate balls

Classic Swedish recipe

Ingredients

  • 100g butter or coconut oil
  • 1 dl sugar or Agave sirup
  • 1 tsp vanilla sugar
  • 3 tbsp cocoa
  • 3 dl oatflakes
  • 3 tbsp cold strong coffee (liquor, rum or konjac)
  • pearl sugar, shredded coconut, almonds or sesame seeds

Mix butter and sugar. Add rest of ingredients. Stand cool for 1 hour. Shape round balls and roll in coconut or other.
